EDITOR’S PERSPECTIVE
W
hile I consider myself fortunate to have grown up during a pretechnology era when bruised knees, bikes and building huts in the backyard were the status quo, I also spent a lot of time watching The Wizard of Oz on repeat. There was something particularly comforting and relatable about each of the characters, each on their own journey of self-discovery. There was a sentiment in the lm, that for me, while inevitably clichĂŠ, has become relevant to me now more than ever before. There s no place like home . Having spent many months overseas in the past several years (of course keeping a watchful eye on the city I ve called home since birth), I have been blessed to experience some of the greatest wonders in the world. From the Great Wall of China to the Taj Mahal in India, I have had the fortune of basking in the glow of their incredible beauty and history. Yet during every experience I have pursued, or serendipitously fallen into overseas, there has been one prevailing emotion that stayed with me. Homesickness. It has only been through leaving and returning, getting a taste of the impressive evolution of our generous little city that I have come to fully appreciate that home is so much more than where the heart is. To my mind, it is what de nes you, playing an instrumental role in how you think, feel, and relate to the world. Through my travels overseas, I have become even more passionate about Christchurch, wider Canterbury and New Zealand as a nation. From our truly unique flora and fauna and the delicious taste of our water (for the most part!), to that No. 8 wire mentality that has rmly cemented us as a highly respected and competitive player on the world stage. I am a great believer that we have a remarkable mix of natural, social, environmental, recreational and professional assets that set us apart. It is with a renewed sense of patriotism, ready to settle and soak up what Christchurch is now and promises to be, that I take on the role as the new permanent Editor of Metropol Magazine. I am immeasurably grateful to be embarking on my new chapter in life helping to lead Metropol, ensuring that it continues to ful l its potential. My hope is that with every magazine we put together with you in mind, you turn each page feeling exactly the way I do now excited, full of hope, and reminded that there truly is no place like home .

EVENING OF MUSIC
French chamber music with ‘joie de vivre’ is the theme of Les Bons Vivants, a Christopher’s Classics performance on Thursday 17 March.
T
he first concert in the series for 2016, it features Principal Harpist with the CSO (Christchurch Symphony Orchestra) Helen Webby. She is well-known throughout New Zealand as a recitalist: solo, chamber and concerto soloist. She also toured with the New Zealand Symphony Orchestra to Europe in 2010. Interestingly, Helen performs on a concert harp built of New Zealand red beech by her brother, Kim Webby. For Les Bons Vivants, Helen has assembled four of her CSO colleagues to join her: Amandine Guerin – First Violin; Serenity Thurlow – Principal Viola; Tomas Hurnik – Associate Principal Cello; and Anthony Ferner – Principal Flute. The Christopher’s Classics programme, founded by Christopher Marshall and now in its 22nd year, has become a mainstay of the Christchurch chamber music scene. It consists of five concerts a year and showcases some of New Zealand’s finest musicians. Following Les Bons Vivants, the programme features Michael Houstoun (21 April); New Zealand String Quartet with pianist Stephen Le Pledge (17 August); Amici Ensemble (5 October); and Affetto (20 October).

What is the most challenging aspect of your job? Managing such an extensive portfolio and various business ventures outside of Redesign, there are many, many challenges. As we cover many time zones, my day starts somewhere between 5am and 6am and the last call will be usually around 10pm. Achieving balance and prioritysetting are the greatest challenges. What is the most rewarding aspect of your job? The ability to work on high-profile projects around the globe; our associations with Indian government and political agencies and high-level Sheikhs in the Middle East; moving into new emerging countries like Myanmar, Vietnam and China; and providing my staff with opportunities within New Zealand and beyond.

What do you enjoy most about working in Asia and the Middle East? I love the people, I love the food, I love talking business and developing relationships. I also really like that as New Zealanders we are well respected wherever we go, and there’s never a bad word to be said about our dealings. If I had a rupee for every person that asked me to help them come to New Zealand, I would be a very rich woman! How do you navigate the cultural expectations being a woman in business in the Middle East? We dress in our abayas, respect the cultures, abide by the rules and do the work set out for us. Our place in the design market is a combination of awardwinning design, repeat business, professional management and effective design systems, and we manage expectations and deliver what we promise, which is very much our core strength. How does your company set itself apart from others? We offer a service and style that is very different to other design companies, and one that is distinct within the markets in which we work. We have tapped into a niche market of retail, food and beverage within the airport sector and offer clients the complete package, from conception to construction. Where do you find your greatest source of support as a woman in business in the global market? Being selected for the 2015 EY Entrepreneurial Winning Women Asia Pacific Program was an incredible experience. It gave me the opportunity to meet like-minded and influential dynamic businesswomen who have given me an amazing amount of support. What are the three key factors that have contributed to Redesign’s phenomenal success? Professionalism, presence (within the markets in which you work), and calculated risk. Know your business, know your markets, know your end strategy and always plan ahead.

What other projects outside of Redesign do you have on the horizon? I’m currently working on a food and beverage concept being developed in Uzbekistan and the wider Middle East that could potentially be introduced into New Zealand malls, but the next venture due to launch is an onlineonly design company. It’s very exciting as it’s completely new to the market and the world at large. How do you achieve the often precarious work/life balance? My work is pretty intense, but I’m fortunate enough to have two wonderful teenage children who are extremely supportive and know how hard I work for them, as I do for all my staff too. What do you love most about living in Christchurch? Now that we’re seeing a lot of new buildings popping up, I’m looking forward to being a part of the rebuild. These are exciting times that present a great opportunity for us to have a truly unique and design-focused city.

THE TALE OF A VERY SICK PUP
As the weekend passed he began to improve - his temperature dropped, his breathing improved and his appetite returned.
Richard Lucy, a veterinarian and ultrasonographer at Ourvets in St Albans, shares his experience of caring for Honey, a very sick little pup:
T
he lunchtime flight from Queenstown arrived in Christchurch with some very precious cargo. Honey, a 10 week-old Golden Labrador pup, was an emergency patient suffering from a life-threatening condition – a pyothorax. His chest cavity was full of pus and without treatment he would soon die. The Queenstown vets had initially stabilised him before flying him to us for further diagnosis and treatment. Honey was a very sad and sick little boy, with a high temperature and laboured breathing on arrival. We immediately began emergency treatment - starting him
on oxygen, triple-therapy antibiotics, intravenous fluids and draining his chest. We removed 120mls of blood-stained pus and some air from his chest cavity, resulting in an immediate improvement in his breathing. We began lavaging his chest, instilling warmed sterile saline to wash out the clots of pus from his chest cavity. His X-rays from Central Otago revealed a strange white fluffy region that we were concerned about, but how to further determine the importance of this? Was it an infection, a twisted lung lobe or even a cancer? Honey was too sick to sedate to do a CT scan, so we opted for an ultrasound scan of his chest. The procedure is painless Honey just lay on a big fluffy blanket while we performed the scan. The abnormal area on the X-ray was located, and under ultrasound guidance, I very carefully introduced a needle through his chest wall
into the area and removed some cells to send to the Veterinary Laboratory at Massey University. Then all we could do was wait for the results to come back from the laboratory on Monday. Honey required round-the-clock monitoring, chest drainage, intravenous fluids, oxygen and medications, as he was such a sick wee pup. We transferred him to the After Hours Veterinary Centre for the first two nights where their dedicated team could look after him overnight, returning him to us each morning. As the weekend passed, he began to improve his temperature dropped, his breathing improved and his appetite returned. The amount of pus that we were draining from his chest was also greatly reducing. HADLOW HOLDS COURT IN DARK TRAGEDY Former Cantabrian Mark Hadlow has returned to his old stomping ground to play the lead role in The Court Theatre's Macbeth.
T
he contemporary, urban staging of Macbeth, Shakespeare's dark tragedy, opened recently. Artistic Director of The Court and director of Macbeth, Ross Gumbley, has long wanted to stage the play “in a society that has been ravaged by conflict in a long civil war and infused with the sort of images we have seen in recent history in Eastern Europe and the Middle East”. Gumbley firmly believes that the story of a decorated general who seizes power and then destroys all threats to his authority is starkly relevant. “Macbeth is almost a 'how-to' playbook for dictators,” says Gumbley. “Rulers like Stalin and Gaddafi; countries like Syria and Chechnya — the pattern of someone assuming control and transforming into a tyrant has echoed through history. “The play is a fascinating study of selfcorruption. Once you give yourself license to act on your darkest impulses, where — and how — does it end? Macbeth gives himself that license and as a result his internal conflict is the heart of this tragedy. He's an incredibly imaginative character, so when he surrenders to his dark thoughts we see up close the toll it takes,” explains Gumbley. 14 March 10, 2016 Metropol
Casting Hadlow, as well as Lara Macgregor as Lady Macbeth, was the key. “With Mark as Macbeth, you see a man for whom murder is his last roll of the dice to be King,” says Gumbley. “The best part for us is that Mark's abilities only get better with age. He can convey the danger and power of Macbeth while simultaneously deeply invoking the audience's sympathy.” Macgregor, former Artistic Director of the Fortune Theatre, recently directed The Court season of Winston's Birthday and last performed with Hadlow at The Court as a married couple in When the Rain Stops Falling. Having also played a couple in Gods of Carnage, Gumbley felt the actors' chemistry would be perfectly harnessed in the lead roles in Macbeth. With the leads and creative vision secure, the remainder of the cast fell into place, with Gumbley assembling “a strata of mature actors with a wonderful blend of young actors coming in that gives this production a fantastic energy”. Numerous actors return to The Court for Macbeth, including Owen Black (who played Malcolm almost 20 years earlier, now playing Macduff); Michael Keir Morrissey; and Adam Brookfield. Making their debuts at The Court are British actor

The wide range of quality wining and dining, nightclubbing, first-rate fashion and home accessory shops to be found in Victoria Street is best typified by the contrast in the two main establishments at either end – Knox Church at the top and Christchurch Casino at the bottom.
“V
ictoria Street is a melting pot. There's fine dining, featuring cuisine from all around the world. It's cheap and cheerful, with good coffee, wine, craft beer, cider and amazing cocktails,” the Regional Manager of Hospitality New Zealand, Amy McLellan-Minty, says. “The street comes alive at the end of the working day, with younger people going there for drinks at container bars, in restaurants and night clubs, and at weekends often staying on into the early hours of the morning. Adding to the fun, the Calendar Girls strip club is to open soon opposite the casino.”
After the earthquakes, many people opening new restaurants and bars there – such as Tequila Mockingbird Restaurant and the Revival Container Bar – were warned against doing so because the future of the street was uncertain. None of them, however, have regretted doing so. Revival has just been expanded into the Little Neighbourhood bar, offering a bigger selection of food. Restaurateur Tony Astle has opened three venues there: The King of Snake, Mexicano's and the accompanying Dirty Lands bar, and Chinwag. Chef Jonny Schwass is now located in the two-storey, weatherboard Harlequin Public House, near the Victoria Clock Tower. On the opposite Salisbury Street corner stands a giant metal gnome outside the Gourmet Hub container restaurant, which serves global food, ranging from Greek skewers to Thai beef salad, Caribbean black fish tacos, Cuban sandwiches, and Portuguese peri-peri chicken. FROM TRAGEDY TO TRIUMPH
It is one of the most significant success stories of Christchurch's post-quake recovery.
What began as a chapter to be added to The Theatre Royal, Christchurch: An Illustrated History, published in 2008, became a story that needed to be told more fully – chronicling the repair, rebuild and restoration of the theatre, and the people involved.
R
ecreating the Magic – The rebirth of a Christchurch theatre was written by Anna Crighton, Liz Grant and Ian Lochhead. It tells the story of the restoration and reconstruction of Christchurch's Theatre Royal: from the brink of collapse as a result of earthquake damage in 2011, to its triumphant reopening in November 2014. This is a story of triumph over seemingly impossible odds. It is one of the most significant success stories of Christchurch's post-quake recovery, and an insight into what can be achieved when people are determined to ensure that an important part of their architectural and theatrical heritage will survive. The Chair of the Theatre Royal Charitable Foundation Board, Joy Lady Simpson, summed it up perfectly. “Because of the decisions made, and work performed over a period of more than 100 years,” she said, “we have been able to reclaim a valuable treasure and offer it as a gift to generations that are to come”. One of the book's authors, Dr Anna Crighton, is widely known as a staunch advocate for heritage and cultural values.
She has been a Director of the Theatre Royal Charitable Foundation since 2001. Anna was awarded the Queen's Service Order for Public Service in 2005 and a Civic Award in 2015. Liz Grant is a Lyttelton-based freelance writer and editor with a background in broadcasting. She is the author of four non-fiction books, and from 2008 to 2011, headed the writing team at the Museum of New Zealand Te Papa Tongarewa. Liz was living in Wellington at the time of the September 2010 and February 2011 earthquakes, but returned to live in Christchurch in August 2011. The third author, Dr Ian Lochhead, is a Christchurch architectural historian. He contributed a chapter to the Theatre Royal's centennial history in 2008 and has also written about Anna Pavlova's 1926 tour of New Zealand. REGENERATION IS HAPPENING AT PACE
The ongoing development of our city has been called many things: the rebuild; a rebirth; regeneration. One thing we can all agree on, is that the face of Christchurch is changing at a rapid pace. Yes, there's certainly a lot going on in our central city, so let's take a look at where some of our key developments are at.
Kiwibank returns to CBD
The Crossing taking shape
Local property investor, Craig Nicholas, is developing a new $14 million stand-alone building at 664/668 Colombo Street. This will be the new inner-city home of Kiwibank. Plans for the new Wilson & Hill Architects-designed complex are expected to be lodged for building consent in the next three months and the contracted target completion date is 31 May, 2017.
Philip Carter's Crossing redevelopment is now well underway, with the steel framework for its 600-plus carpark building showing. Due for completion in early 2017, the precinct will feature office floors at either end, separated by hospitality. It will link to Ballantynes department store via the existing air bridge to the west, and to The Crossing car park to the south.
New $72 million health facility The Government has committed to the development of a $72 million outpatients facility to be built in the Health Precinct on St Andrew's triangle, directly opposite Christchurch Hospital. Spanning five storeys and 10,500m2; the new building will provide outpatient and a range of other clinical services.
The Terrace making great progress Antony Gough's famed development ‘The Terrace’ is flying along, with the central Oxford Terrace buildings built and external wall claddings now being installed. Foundations for the office building on the corner at Cashel and Oxford Terrace have just been finished. The five-storey office building on Hereford Street will be fully framed before Christmas. Stage One, facing the Avon River, will open in mid-2016 to coincide with the completion of this part of the Avon River Precinct.
East Frame kicks off soon By October, Fletcher Residential will start work on the East and North Frame development, which will feature nearly 1000 townhouses. The final area is due to be fully completed by mid2024. The $800 million project will also see the former Orion building on Armagh Street developed into a retail and hospitality complex by February 2020.
PwC Centre prepares for 2016 opening Opposite the Bridge of Remembrance, local builder/developer Armitage Williams Construction is pressing ahead with its prime, $60 million, riverside office building. Construction of the five-storey building, known as The PwC Centre, started in late 2014 and PwC expects to move from its temporary accommodation in Burnside late this year.

KEEPING THE DREAM ALIVE WITH A MUCH-IMPROVED SCIENCE CENTRE It was a much-loved central-city attraction for 14 years and now Science Alive! is going to be bigger and better than ever before, thanks to the development of a new $50 million international science centre within the central city.
T
he not-for-profit organisation has purchased the Durham St court house site from Ngāi Tahu Property and, once existing occupant the Ministry of Justice moves to the Government's new Justice Precinct in late 2017, development can begin. Dedicated to teaching the younger generation about science through a
hands-on approach, the organisation will be incorporating more adult-focused exhibits because space at the new 5500 squaremetre centre is twice that of its former Moorhouse Avenue base. New features will include an earthquake gallery using 3D technology and a 100-seat, full-dome 3D theatre, which would also be used as a planetarium.
The first stage, including the dome theatre, is expected to open in early 2018. Other stages are expected to open later that year depending on funding. The science centre will not fill all the buildings in the complex, with about 7100 square metres being leased out for commercial purposes. The trust board already has $40 million from its reserves, insurance proceeds and a bank loan to contribute to the development, and plans to raise another $10 million. The project is in good hands, with awardwinning Te Papa Museum architect, Pete Bossley, leading the charge alongside Canterbury architect Cymon Allfrey.

RAKAHURI RAGE RETURNS BIGGER AND BETTER
The Rakahuri Rage returns to Rangiora for its second year at 10am on Sunday 20 March 2016.
I
t's a great day out for competing cyclists and spectators alike with a chance to enjoy some action-packed adventure in the beautiful North Canterbury countryside. ‘The Rage' is a team race challenging riders to complete as many laps as possible in six hours around an 8km course. Starting at Rangiora Racecourse, it winds its way through dappled light forest, onto bumpy tracks and along stopbanks near the Ashley River. It's fast-paced, furious and it's great to fun watch. Last year, 88 teams took part and the organisers are expecting to top that this time with new categories including a junior category (12-17 year olds) and a primary school category (for year eight students). Dress-ups are also encouraged with some special prizes up for grabs for the best costumes. All the proceeds from the race are going towards the MainPower Primary School Swimming Programme, which provides students Years Two to Eight with 10 swimming lessons for just $10 per student.

fter the devastating 2010-2011 earthquakes the café was set up in 2013 and sold to the 'Person to Person Help' Trust, a Kaiapoi Community Trust, established by the Kaiapoi Baptist Church. There were no cafés left in the area and the group saw the opportunity to create something completely unique in the area; where locals could meet, chat, run classes or exhibit their art. Tracy Pirie co-ordinates and manages the café. PIONEERING MODERN MEDICINE Southern Trials Group Ltd (SCTG) was established in 2007. Based in Christchurch, co-owners Doctor Simon Carson and Julia Mathieson have many years of experience in clinical trials management. There are now three branches in Christchurch, SCT Beckenham, SCT Riccarton and SCT Shirley, and two sites in Auckland.

r Carson explains that no drug or vaccine can get to the market without going through a clinical trial. “Right now at Southern Clinical Trials Group we are recruiting for trials for drugs to treat osteoarthritis, asthma, raised lipids and psoriasis,” Dr Carson says as he outlines exactly what clinical trials are intended to do: Clinical trials are a key research tool for advancing medical knowledge and patient care. A clinical trial involves research using human volunteers (also called participants) who receive a specific intervention or treatment according to the research plan or protocol. This protocol sets out in detail the process and design of the study, the treatment to be used, and the measurements that will be required.
CLINICAL TRIALS ARE A KEY RESEARCH TOOL FOR ADVANCING MEDICAL KNOWLEDGE AND PATIENT CARE All parties (investigators, study coordinators and pharmaceutical company employees) involved with the development and testing of the study medicine must follow the study protocol and a specific set of international guidelines called Good Clinical Practice (GCP). Participants who volunteer for a trial are advised beforehand of possible risks. Before a clinical trial can begin for a treatment, medication or device, it must show promising results in laboratory or animal tests. At the beginning of a clinical trial, a team of doctors, nurses and other health professionals checks the health of the participant and gives specific instructions for using the treatment, medication or device throughout the trial.
USUALLY, TWO SUCCESSFUL TRIALS ARE REQUIRED BEFORE A DRUG OR TREATMENT IS APPROVED BY THE FDA.
The team monitors the participant as the trial progresses. Are clinical trials safe? For the most part _ yes. However, sometimes clinical trials are for experimental medications intended for very sick people, so in those cases, there are generally more risks involved. The participant will always be advised of the risks involved. Who can take part in a clinical trial? All clinical trials have guidelines about who can participate. Criteria may include
age, gender, the type and stage of a disease, previous treatment history and other medical conditions. Can a participant quit after a clinical trial starts? Yes, they can pull out at any time. What are the different stages (phases) of clinical trials? To be approved by the United States Food and Drug Administration (FDA), an experimental drug or treatment has to pass through several phases of clinical trials: Phase I Trials - test an experimental drug or treatment in a small group of people (20-80) for the first time to evaluate its safety and identify side effects. Phase II Trials - after safety has been confirmed, Phase II trials test the experimental drug or treatment in a larger group of people (100-300). Phase III Trials - test the experimental drug or treatment in a large group of people (1000-3000) to confirm its effectiveness. Usually, two successful trials are required before a drug or treatment is approved by the FDA. Phase IV Trials - acquire additional information about an experimental drug or treatment after it has been approved. wner, Cheryl Murray, has had the business for 16 months yet the building has been a café for more than 20 years. hese Freestyle Mondays are the brainchild of Jamie Bennett, chef and owner of Town Tonic and Passengers + Co. It's when fellow chefs plus Jamie and crew can let their imagination and creative juices run wild, interact and have fun. “Freestyle is the theme; food is the focus; open minds are all accepted; and camaraderie is the goal,” he says. Started in the middle of 2015, Freestyle Mondays have seen some of the city's most innovative and adventurous chefs let loose in this open kitchen, with Kane Bamberry from Roots kicking off the fun. Themes are as diverse as the chefs themselves, from free-range chef Alex Davies, formerly of Shop Eight, who is now vegan; to Gilles Thebault, baker extraordinaire from Le Boulangerie, who is also a classic French chef. In February, young chef Finbar, just back from trendsetting Berlin, led the freestylers. “He has travelled the world, dined in many of the top restaurants and cooked in a few as well,” Jamie says. Freestyle Mondays are a chance to show people new

Topics for the future are likely to be quite audacious, Jamie hints, with 'No Plates: Served on the Table' one suggestion, while 'Femme Fatale, Our First Lady of Freestyle' will introduce a female chef as team leader. “Creating dishes can be quite emotional,” Jamie confides. “Chefs can be quite drained afterwards.” Freestyle Mondays give them a chance to bounce ideas off each other, and often a dish isn't finished until it hits the plate. At $60 a head for between five and eight courses, plus the entertainment value of watching top chefs at play, Freestyle Mondays are an exciting dining event that lifts the local dining scene out of the ordinary. LOCO WITH THE COCO

If you like Pina Coladas and being caught in the rain, I'm the man you can turn to for the easy solution to a cocktail on a warm night. Pina Colada means 'strained pineapple' but, from my point of view, it's the coconut component that makes the drink. The drink was invented in Puerto Rico and the bartenders may turn in their graves with my recipe, but here goes.
Ingredients: Ice 3/4 cup of pineapple Peeled lemon 250ml coconut water 1 pot natural Coconut Collaborative yoghurt Fresh pineapple wedges to garnish Method: Combine in a blender and blend until smooth. Stick a straw in, add a pineapple wedge, and soak up the sunshine. If you're feeling adventurous, add a shot of white rum for a tropical evening drink you can enjoy while listening to old songs from the late 1970s.

Monkey Spices, the refreshingly different Italian eatery in Rolleston, is approaching its ninth year in business. Long enough to be regarded as a Rolleston icon, say owners Chie and Taka Mochizuki.

erving traditional Italian food with an oriental twist, the restaurant is the brainchild of the young couple who hail from Japan but adore Italian food. And it is attracting more and more customers as post-quake Rolleston continues to grow. “We have regulars who have been coming to us from the very beginning, as well as a growing number of new diners,” Chie says. The secret to the Monkey Spices success is the expansive and imaginative menu that caters to all appetites and ages – perfect for everyone, especially families. From tasty tapas to hand-stretched crispy pizzas cooked in the gas-fired pizza oven, to pasta prepared by the Italian chef, substantial mains and delicious desserts, there are a few firm favourites. Like the traditional Japanese dumplings that get the Monkey Spices treatment – unexpected flavours and nontraditional spices and dressings. And the signature dishes: Chinese Salad and Hoajao Crisp Chicken Fettucine. The delicate gnocchi is also
a firm favourite. “Our chef was taught to make gnocchi by his mum and it's just like velvet pillows,” Chie says. While chef Taka works in the kitchen, Chie manages front of house. “Our aim is to make everyone welcome and ensure they are happy,” she says. AN OLYMPIC CULINARY FEAT

A lucky few were privileged to partake in an exquisite five-course banquet at Visions at the Christchurch Polytechnic Institute of Technology (CPIT) last month. It was an opportunity for our National Culinary Olympic Team - NZChefs Fonterra - to groom its gastronomic flair in the all-important lead-up to an Olympic event to be held in Erfurt, Germany in October this year.

he team consists of Steve Le Corre, John Kelleher, Darren Wright (Chillingworth Road); Mark Sycamore (Tequila Mockingbird); William Mordido, Richard Hingston (Christchurch Casino); Ken O'Connell, Corey Hume, Jie Min Aw and Brian Bae. NZChefs Fonterra is a national association representing professional chefs, cook trainees and confectioners across the country. It is an enviable mix of seasoned chefs and exciting new talent working to create an Olympic menu capturing the essence of New Zealand cuisine using both classic and contemporary methods. Cookbook Author and Chef, Tony Smith, provided a very impressive cervena venison dish at Visions to delight the palate. Grant Watson, Director of Global Foodservice at Fonterra, says “We have some amazing chefs in this country working with unique and innovative techniques and fabulous, fresh ingredients.” The team will travel around New Zealand sharing the experience with as many New Zealanders as it can. It is hoping that up-and-coming chefs might be inspired to participate in the 2020 event. “We've been missing a team for 28 years, so there's a lot riding on this year's team. I think they are out to prove that New Zealand can hold their own. I know they will do well.”

It is presented in a corn-dusted burger bun with our home-made BBQ sauce, cheese, mesclun salad mix and Emerson's craft beer-battered onion rings. For the burger: (makes 4 good-sized patties) 800g prime-quality beef mince (from Peter Timbs Meats if you can) Salt & pepper to taste Your choice of seasoning (a dollop of mustard adds flavour) 1 medium onion, finely chopped 1 egg (to bind the pattie) Breadcrumbs Method: Mix all ingredients above in a bowl and split into four equal-sized patties. Heat BBQ or fry pan and spray with a little oil. Cook patties on a medium heat until cooked through, turning once. To serve: 4 corn-dusted buns Mesclun salad mix Cheese BBQ Sauce (or your choice of alternative)
Beer-battered onion rings, fries and aioli (optional for you at home) Top each pattie with a slice of cheese a minute or two towards the end of cooking. Meanwhile, take your choice of bun, split it and lightly toast. To serve, add one pattie, sauce of your choice and mesclun. Spike with a bamboo skewer if yours turns out as chunky as ours does. I would call myself a pretty keen gardener. I planted a new garden at a new house only a few years ago and have had the immense pleasure of watching it grow and flourish.

“It's styled after a wool shed on the exterior, but the focus on the interior is the post and beam structure of the big central lodge room.” The owner is milling windfall timber himself, which has then been fashioned into the structure by craftsmen from a different region. The 'high country' team is also building in the 'low country'. The site is in the Lincoln rural area and the house is styled after a maimai. It has an 18m x 4.5m high cast in-situ wall and will eventually feature 7m macrocarpa poles.
